{"id":15388,"date":"2019-10-01T10:55:43","date_gmt":"2019-10-01T09:55:43","guid":{"rendered":"https:\/\/www.bulk.com\/uk\/the-core\/?p=15388"},"modified":"2024-11-26T13:55:01","modified_gmt":"2024-11-26T13:55:01","slug":"vegetarian-autumn-stew-recipe","status":"publish","type":"post","link":"https:\/\/www.bulk.com\/uk\/the-core\/vegetarian-autumn-stew-recipe\/","title":{"rendered":"Veggie Autumn Stew Recipe"},"content":{"rendered":"<p><span style=\"font-weight: 400\">This World Vegetarian Day, we&#8217;re sharing some veggie-friendly recipe inspiration for anyone looking to shake up their midweek meal prep.<\/span><\/p>\n<p><span style=\"font-weight: 400\">First up we&#8217;ve got a warming Autumn stew from #TeamBulk ambassador<\/span><a href=\"https:\/\/www.instagram.com\/helenaeiken\/\" target=\"_blank\" rel=\"noopener\"> <span style=\"font-weight: 400\">@helenaeiken<\/span><\/a><span style=\"font-weight: 400\"> using the peanut butter, quinoa, coconut flakes and cashew nuts from our<\/span> <span style=\"font-weight: 400\">Active Foods range<\/span><span style=\"font-weight: 400\">.<\/span><\/p>\n<p><b>Ingredients (serves 4 people)<\/b><\/p>\n<p><span style=\"font-weight: 400\">To make the stew:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 large onion, diced<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 inch of ginger, grated<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2-3 cloves of garlic, minced<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2-1 tablespoon curry powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Juice from 1 lime<\/span><\/li>\n<li style=\"font-weight: 400\"><a href=\"https:\/\/www.bulk.com\/uk\/products\/peanut-butter-1kg\/bpf-pbut\"><span style=\"font-weight: 400\">2 tablespoons Peanut Butter<\/span><\/a><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 can diced tomatoes<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 can full fat coconut milk<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1-2 large sweet potatoes, in 1\/2 inch cubes (optional: swap some for pumpkin)<\/span><\/li>\n<li>1 can chickpeas<\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2-3 carrots, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Water (optional: vegetable broth)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Olive oil<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Salt and pepper, to taste<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400\">Cauliflower\/quinoa:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 cup of Organic Royal Quinoa Grain<\/span><span style=\"font-weight: 400\">, cooked<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 head of cauliflower, finely processed\/chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Salt and pepper, to taste<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400\">Topping:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Avocado<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Dried Coconut<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Whole Cashew Nuts<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Coriander<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Lime slice<\/span><\/li>\n<\/ul>\n<p><b>Instructions<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Saut\u00e9 the onion, garlic, ginger and curry powder until the onion becomes translucent<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add the lime juice, coconut milk, diced tomatoes and peanut butter<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Let it all simmer for 10-15 minutes. The longer the better, as this is where your stew will become deliciously creamy<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add sweet potatoes, chickpeas, carrots and salt &amp; pepper. Let everything simmer until the vegetables are tender. 20-30 minutes should do it<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Serve with a mix of finely processed cauliflower and quinoa., seasoned with salt and pepper<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Top with lime, cilantro, cashews and Dried Coconut flakes<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400\">Try the recipe for yourself, and share pics on social media.
