An Aubergine &amp; Pomegranate Quinoa Bowl, the perfect combination of salty &amp; sweet.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Grain bowls are a great way to ensure you\u2019re getting a balanced lunch with plenty of vegetables, wholegrains and protein.<\/span> <span style=\"font-weight: 400\">Inspired by Moroccan flavors, t<\/span><span style=\"font-weight: 400\">his dish is perfect for those looking for a lunch that is filling without being too heavy. Oh &#8211; and it\u2019s 100% vegan!<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><iframe loading=\"lazy\" title=\"Eating Vegan: Aubergine &amp; Pomegranate Quinoa Bowl\" width=\"640\" height=\"360\" src=\"https:\/\/www.youtube.com\/embed\/lhGkyAJUfQA?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<p>&nbsp;<\/p>\n<h2><span style=\"font-weight: 400\">Ingredients (Serves 2):<\/span><\/h2>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Pinch of saffron threads<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 large aubergines cut into slices<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 tbsp olive oil<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp ras el hanout<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">100g <\/span><span style=\"font-weight: 400\">Bulk Powders quinoa grain<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 garlic clove, crushed<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Seeds from 1 pomegranate<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Bunch of flat leaf parsley, roughly chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Juice of 1 lemon<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">20g toasted <\/span><a href=\"https:\/\/www.bulk.com\/uk\/products\/walnut-halves\/bpf-whal\"><span style=\"font-weight: 400\">Bulk Powders\u2019 walnuts halves<\/span><\/a><span style=\"font-weight: 400\">, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 tbsp tahini<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">4 tbsp plain soya yogurt<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp <\/span><a href=\"https:\/\/www.bulk.com\/uk\/products\/zero-calorie-syrup\/bpf-zcsy\"><span style=\"font-weight: 400\">Bulk Powders\u2019 zero calorie syrup<\/span><\/a><span style=\"font-weight: 400\"> maple flavour<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">20g <\/span><a href=\"https:\/\/www.bulk.com\/uk\/products\/dried-goji-berries\/bpf-goji\"><span style=\"font-weight: 400\">Bulk Powders\u2019 goji berries<\/span><\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h2><span style=\"font-weight: 400\">Method:<\/span><\/h2>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Preheat the oven to 200c.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Place saffron in a small bowl with 2 tsp hot water &amp; leave to one side.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Lightly score over one side of each aubergine slice.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">In a small bowl, mix the oil, ras el hanout and garlic. Brush the mixture on both sides of the aubergine slices and season with Bulk Powders\u2019 pink himilayian salt and pepper.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Place a baking tray and cook in the oven for 35-40 minutes until the aubergines are soft and golden brown.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Pour 100g of Bulk Powders\u2019 quinoa grain into a saucepan and cover with 300ml cold water<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Bring to boil and cook for 12-15 minutes until all water has evaporated and the grains have doubled in size.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">In a small bowl, mix the pomegranate seeds with the parsley, half the lemon juice and the Bulk Powders walnuts halves.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Put the tahini into the bowl with the saffron water and add the yoghurt, the remaining lemon juice and the maple syrup.
