Gluten Free Caramel Apple Protein Muffins

Summary

These little beauties are gluten free and taste amazing. Try this recipe for some wonderfully soft muffins, with a caramel and apple flavour.

 

Instructions

1.) Set your oven to 160-180 degrees while you prep.

2.) Heat coconut oil in a non stick pan and add the chopped apples, cinnamon essence, cinnamon & agave and start sautéing your apples.

3.) Leave them in low-med heat while you prepare your muffin mix, making sure you keep stirring the apples so they evenly golden.

4.) For your muffin mix, add all your dry ingredients then your wet ingredients and using a whisk, mix vigorously.

5.) Line a muffin tray with muffin cases and check on your apples. they should have turned a golden rainbow of colours, with some more caramelised than others.

6.) Add approx 3/4 of the sauteed apples to the mix and stir them in.

7. ) Spoon mix into your muffin cases and with a small spoon top all the muffins with the remaining sauteed apples.

8.) Pop into hot oven for approximately 20 minutes.

You will see they bake quite quickly, so you need to make sure you take them out in time. They will be soft and springy to the touch, and may even look undone. If you are unsure simply break one apart and check. Once done, leave on a cooling rack and you’re done.
