Peanut Butter Noodles

Struggling for mid-week meal inspiration? This easy, delicious and healthy Peanut Butter Noodles recipe has you covered. Thrown together with everyday ingredients, it’s easy to modify to your taste. Swap out the chicken for any vegetables you have on hand for a tasty plant-based meal.


Ingredients (serves 2):

  • 2 chicken breasts, sliced into strips
  • 1 red chilli, finely chopped
  • ½ tbsp ginger paste or grated ginger
  • ½ tbsp garlic paste, or 2 crushed garlic cloves
  • 1 pak choi, chopped
  • 100g mangetout
  • ½ yellow or red pepper, chopped
  • 2 packs bulk™ Diet Noodles

For the marinate:

  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup
  • 3 tbsp bulk™ Peanut Butter
  • Juice of 1 lime




Start off by mixing all the marinate ingredients in a bowl, then set aside.
Heat 1 tbsp of oil in a large pan, then cook the chicken until browned on the outside and almost completely cooked through.
Add the chilli, ginger and garlic, then add in the chopped vegetables. Cook for another couple of minutes, then pour in the peanut butter sauce. Continue cooking until the chicken is completely cooked through.
Prepare the noodles according to pack instructions, then fold into the sauce.
Top with spring onions and chopped cashews.
