Vegan Alfredo with Nutritional Yeast Flakes

Is there ever anyone who says no to pasta? If there is, we’re sure they won’t be able to resist this creamy, cheesy bowl of goodness. Not only does this taste delicious but it is 100% vegan-friendly, so perfect for anyone who is lactose intolerant or following a dairy free or vegan diet. Featuring our newest addition our selection of health foods, Nutritional Yeast Flakes are what makes this dish irresistible. Nutritional Yeast may not sound the tastiest option to the uninitiated. However, these powerful little flakes offer a lot more than meets the eye. They are ideal for vegetarians and vegans, providing a natural source of protein and a whole host of B-Vitamins. These tasty little flakes provide 49g protein and 27g fibre per 100g, along with a source of Thiamin, Niacin, Folic Acid and Phosphorus. Give them a try!

Ingredients (serves 4):

  • 100g Bulk Whole Cashews Nuts
  • 1 vegetable stock pot
  • 350ml water 
  • 120ml Bulk Oat Drink
  • 25g Bulk Nutritional Yeast
  • 3 tbsp cornflour
  • 1 tbsp lemon juice
  • ½ onion, finely chopped
  • 3 garlic cloves, crushed
  • 1 tbsp olive oil
  • Salt & pepper to taste 
  • 350 dry Fettuccini, cooked according to pack instructions

To serve – chilli flakes and fresh parsley

Optional additions – chicken, chickpeas or peas

Method:

  1. Add the cashews, vegetable stock, water, oat drink, nutritional yeast, cornflour and lemon juice to a blender and blend until smooth.
  2. Heat 1 tbsp of olive oil in a large pan, then add the onions and garlic. Sauté for a few minutes, then pour in the sauce.
  3. Heat the sauce while stirring continuously until it starts to thicken. This will only take a few minutes. Season with salt & pepper to taste.
  4. Take off the heat and fold in the cooked fettuccini. Sprinkle some fresh parsley and chilli flakes to serve. Enjoy!
